Yummy Dahi Barai

Sweet Dahi Barai 

I love making iftari for Ramadan. This easy and delicious recipe is my mom's. She makes the most amazing iftari ever! I will also give a recipe for tangy tamarind chutney that pairs perfectly with dahi barai so keep reading.

First prepare the yogurt mixture which will be the base for your barai. I used around 4-5 cups of yoghurt with a bit of water. I added sugar and fruit chaat seasoning. You can add as little or as much as you want depending on how sweet you want it. I like it super sweet so I go a bit crazy with the sugar ;) !



Once your base is ready set it aside. Now take gram flour,  cumin seeds, red chilli powder, salt, a pinch of baking powder and mix it all together. I don't have exact measurements because I do a rough estimate of all the ingredients. However do keep in mind that baking powder should always be a pinch or two. Mix all of this thoroughly.


Prepare a bowl with cold water where you will be soaking the barai once they are fried up.


Heat up oil for a few minutes.


Scoop the gram flour mixture with a small spoon and drop a dollop in the hot oil. 


Be vigilant as they tend to cook up very fast ! When they are light golden brown take them out and dunk in cold water for a few minutes. This will help soften them.


Once they have soaked for a few minutes, gently squeeze out the excess water and lay down gently in the yogurt mixture.


Press down gently with a big spoon so they are immersed in the yogurt.


Making the tamarind chutney is super easy. From your local grocery store find a tamarind paste ( you can also use actual tamarind and squeeze out the seeds !) . Mix with a bit of water and brown sugar and simmer on low heat for a few minutes.


Garnish your dahi barai with more fruit chaat or dahi barai seasoning and tamarind chutney.
