Yummy chocolate chip cookies !

These chewy soft cookies are full of delicious chocolate chips and are super easy to make. I think I have finally perfected the recipe after some trial and error lol :P

This recipe yields a dozen cookies which is more than enough for my husband and I but you can increase the measurements for a larger serving.

Ingredients:
1/2 cup butter room temperature
1/2 cup sugar
1/2 cup tightly packed brown sugar
1 egg
1 teaspoon vanilla extract
1.5 cups of all purpose flour
half teaspoon of baking soda mixed with 1 teaspoon of hot water
a pinch of salt
1 cup chocolate chips ( I used semi-sweet)

In a large mixing bowl mix sugar, brown sugar, and butter till a smooth mixture forms. Beat in the egg followed by vanilla extract. Then add the baking soda mixture, salt, flour, and chocolate chips.

Make sure everything is mixed well.

Drop big dollops onto an ungreased baking dish and put in a preheated oven at 350 degrees. Bake for around 10-15 minutes. For a softer cookie take it out earlier, for crispier cookies leave in the oven till the edges are browned.

Easy to make parfait !

I made this parfait a few days and it was so delicious and a perfect treat for those hot summer days. It's not the healthiest treat around but it's perfect for indulging in once in a while ;)

You will need:

Heavy whipping cream
Vanilla extract
Sugar
Fruits of your choice such as bananas, strawberries, mangoes etc
Angel cake or pound cake ( you can buy these at your local grocery store)
Cookies or biscuits for garnish ( I used a shortbread cookie)

Step 1: Whip the heavy whipping cream in a big bowl until stiff peaks form. I used about 2 cups of whipping cream. Add 1 tablespoon of vanilla extract and 2-3 tablespoons of sugar and fold it into the cream
Step 2: Crumble the pound cake or angel cake at the bottom of a glass ( or a small mason jar) and then start layering the whip cream, fruits followed again by cake. You can make as many layers as you like. I made about 3 layers.
Step 3: Garnish the top with cookies, crushed nuts or whatever you like. You can even drizzle some melted chocolate on top.
